The health benefits of garlic have been known for thousands of years. Used by the Romans, Egyptians, Chinese and much of southern Europe as medicine and food, garlic has been documented throughout history as a valuable herb. This is because garlic contains the sulphuric acid allicin, which when activated by the enzyme alinase is converted to allicin, the component that gives garlic its traditional effects and its pungent odour. This means that the more allicin that is in the garlic, the more effective it is. It is often recommended that raw garlic or garlic supplements be used instead of cooked garlic because heat activates the allinase, stunting the conversion of allicin. Evidence exists from in vitro and animal studies that garlic derived organosulphur compounds raise glutathione levels in the body. These garlic-derived organ sulphur compounds may inhibit the activity of the inflammatory enzymes in vitro and may decrease the expression of nitric oxide synthase in inflammatory white blood cells. Organosulphur compounds in garlic have also been found to decrease cholesterol synthesis by liver cells.
