Clearspring Organic Kuzu (also known as Kudzu) is a superior quality starch thickener with a smooth texture and neutral flavour that is naturally extracted from the roots of one of Japan’s most vigorous mountain plants. Its quality was commended in the 2012 Free From Awards.
How to use
Ideal thickener for soups and stews, sweet and savoury sauces, glazes and pie fillings, it is easy to use:
Crush the chunks
Dissolve in a small amount of cold water
Add the mix to to your cooking liquid
Heat, stirring continuously until thick and translucent.
A half to one tablespoon of kuzu will thicken one cup of liquid. Please note: 1 ¾ tbsp. of Kuzu can replace 1 tbsp of corn flour.
Kuzu production
Clearspring's kuzu producer has been making kuzu for five generations, and still carefully follows the traditional 120-day process of washing, settling, filtering and drying the pure organic kuzu root starch that it supplies to Clearspring. Located in southern Kyushu, where the volcanic soils produce exceptionally vigorous kuzu plants, they are one of the few remaining producers of pure kuzu starch in Japan.
A Superior gluten free thickener
Kuzu has been a valued ingredient in Japanese cuisine and confectionery for more than two thousand years. Its high content of complex starch molecules makes it a powerful thickening agent. While standard thickeners like cornflour can do much the same job, they tend to be highly processed and treated with chemical bleaches and extracting agents, whereas Clearspring pure organic kuzu is a completely natural gluten free starch.
How To Use:
A superior thickening agent with a delightfully smooth texture and no starchy or interfering taste. Use Kuzu to thicken soups and stews, both sweet and savoury sauces, glazes, desserts and pie fillings. Dissolve in cold water before adding to hot liquids.
Store in a cool, dry place.

Here at Baldwins it is our policy to give 100% satisfaction. We do know however, that there may be the odd occasion when you wish to return items. Below you will find an outline of our returns policy.

If, for any reason, you are unhappy with an item you have received, you may return it within 28 days, unopened and in its original condition, to our Freepost address (below). Upon receipt, we will be happy to give you a full refundfor the item.
Alternatively, you may wish to exchange the item for another. Please note that post and packing costs are non-refundable.
Returning An Item
To return an item, please package in its original wrapping (if possible) and provide a note outlining your name, address, order number and reason for returning.

This service will generate a label that you can either print at home or take with you to the post office for them to print.
You will need your order number which is the 6 digit number sent out on your order dispatch email. (If you have any trouble finding this, do give us a call and we can happily find it for you).
Once orders are returned, we aim to process them within 72 hours and (if required) notify you by mail when we have processed your refund and ship any replacements out as soon as possible.
If your item is over 20 Kg or larger than the specified size (or too heavy for you to take to the post office) please call us and we can arrange collection with one of our courier partners.
