How To Make An Easy Vegan Tiramisu

Ingredients

 

Method: 

Vegan mascarpone: 

  1. Blend the tofu, sugar and vanilla extract in a processor until smooth
  2. Add coconut cream and blend for 1 min (be careful not to over blend)

 

To assemble: 

  1. Have ready an 8 x 8 inch / 20 x 20 cm baking dish, the jug of coffee and cookies 
  2. Dip each cookie in the coffee until fully covered and lay them at the bottom of the dish
  3. Once one full layer is done, cover with a layer of coconut cream and then repeat for 3 layers 
  4. Smooth the final cream layer 
  5. Cover the dish in clingfilm and put in the fridge to set for 4hrs 

 

To serve:

Sprinkle with a dusting of the cacao powder using a sieve
