What you’ll need:

 

Method:

  1. Pre-heat oven to 200° C /gas 6
  2. Chop all potatoes + place into a large pan of water cook until tender the drain + add vegan butter, salt & pepper mash it all together + set aside.
  3. Dry-roast the coriander seeds then add a splash of oil. 
  4. Add thyme, onion, garlic + carrots. 
  5. Cook on low heat until soft tender. 
  6. Add mushrooms + Sundried tomatoes, balsamic vinegar + more oil and cook for another 10 mins. 
  7. Stir in stock, lentils, chickpeas + all their juice - turn up heat + allow to bubble for 10 mins to thicken the sauce. 
  8. Add parsley to the mix + season, transfer into a large oven dish. 
  9. Spread the mash on top and rough up the surface to create texture.
  10. finally, mix oil, garlic, lemon zest herbs + breadcrumbs in a bowl. 
  11. Sprinkle it over the mash + place the pie into a hot oven for 10-15 mins or until piping hot + with a golden- brown crust on top.
